Tech 3 defending headlock from front, side and rear (arm bar type choke, also called a rear naked choke) for more advanced students, have eyes closed and the students will have to react to to any one of the grabs 2x 5 reps each

finish with jab / cross roundhouse vs a shield 2x 10 each
